Ingredients:

  • 2 eggs boiled and sliced
  • ½ cup of spinach leaves
  • ½ a small spanish onion, sliced finely

Method:

  1. Lightly grease a pan with spray oil
  2. Add the spinach and stir for 1-2 minutes. Add the onions and stir for 1 min
  3. Place on a plate and enjoy

Serves 1

Notes: You can have your rye bread with the salad or make it as a sandwich. You do not have to lightly cook the spinach.
