
Sugar Detox Recipe: Zucchini and Walnut Muffin Mug

Ingredients:
- 1 egg
- ½ tsp. vanilla extract
- 1 tsp. cinnamon
- 1 tsp. coconut oil
- ½ tsp.baking powder
- 2 tsbp. ground linseed meal
- 2 tbsp. almond flour
- 1 tbsp finely shredded zucchini
- 1 tbsp. chopped walnuts
- a dash of salt
- 1 tbsp of stevia
Method:
- Mix the wet ingredients including the zucchini thoroughly
- Add the dry ingredients and mix well until combined
- Stir in walnuts once combined well
- Add the mixture into a lightly greased ramekin dish
- Bake at 180c for about 20 minutes or until the top is set

Notes: You can make these the day before and enjoy them for breakfast.
